Buckwheat Piadina

An unleavened flatbread that can be used in a variety of ways including as a base for pizza. 5 minute preparation, 8 minutes to bake.

After mixing the dough let it rest a few minutes before rolling it out.
You can substitute rye or spelt flour and if you do, omit the chia seed. Made with rye, these make perfect pizza. I experimented with rice and millet flour but neither one made a bread but rather a kind of funky tasting biscuit.

I bake a double recipe at once and freeze them and that lasts me a while.

Suitable for plant based diets, vegan and vegetarian.
