Fig Chia Seed Salsa

This unique salsa is very verasitile and the recipe is so easy and quick…
Ingredients:
4 Roma tomato
2 spring onions
2 cloves garlic
jalapeño  pepper
6 dried figs
¼ cup ground chia seed
¼ to ½  cup raw apple cider vinegar
cilantro

  1. chop  tomato, onion, garlic, pepper, and figs into small pieces.
  2. add chia seed, vinegar and cilantro. Mix and place in a glass jar.

You can serve this right after making it but I sit it on the counter for a while first. It improves with age and keeps in the fridge a long time.

Suitable for all plant based diets, vegetarian and vegan.
