This should not be cooked too much. You can leave out the potato and make this a raw soup, that is how I prefer it. If you have it raw then you need to make the coconut milk yourself, it is really easy: Get a young coconut. open it, drink the water. Scrape out the coconut meat and put into a blender. Blend until liquid. You will probably have to add a little water.
This is suitable for plant base diets – vegetarian and vegan. It can be made suitable for a raw food diet.
